Kale with Sausages and White Beans
This is a great way to introduce kale to people who aren’t sure they like it yet. The sausages add the perfect amount of fat and seasoning, and the white beans add a creaminess that will make this dish your new favorite comfort food.

  1. Heat a large skillet over medium-high heat. Add the olive oil and onion and sauté for 3 minutes, until onion starts to brown.
  2. Remove the sausage from its casing and add to the pan. Break up the sausages into smaller bite-sized pieces, then cook, stirring regularly, until sausage is browned, about 5 minutes.
  3. Add garlic and kale to pan, toss a few times, cover with a lid and cook for 2-3 minutes. Uncover, stir, and cook for another few minutes until kale is wilted and bright green.
  4. Add beans to the pan and toss gently to combine. Cover again until beans are warmed through, about 2 minutes.
  5. Finish the dish with a vinegar or lemon juice to add zip and little salt and pepper to taste. Serve immediately.
