  1. Place quinoa in a fine mesh sieve and rinse. Combine broth and quinoa in a pot and bring to a boil. When boiling, cover and reduce heat to low. Cook for 15 minutes – quinoa is finished when the germ has expelled from the seed, making it look like it’s grown a tail. Don’t stir quinoa (or any grain!) while it’s cooking. Remove from heat and let cool.
  2. Meanwhile, combine baby artichokes, sun-dried tomatoes, Kalamata olives and garbanzo beans in a large bowl. Add quinoa, basil, olive oil and rice wine vinegar and stir gently to combine, then serve. Taste, and season with sea salt and pepper if desired.
