  1. In a large skillet, heat oil and add onion. Sauté for a few minutes, and then add shiitake mushrooms, carrots and bell pepper. Stir-fry for 4-5 minutes, adding water to the pan by the tablespoon if the veggies start to stick.
  2. Next, add bok choy, garlic, tamari sauce and rice wine vinegar. Grate ginger over top if using. Toss to combine and continue tossing until bok choy has wilted and Turn off heat, sprinkle red pepper flakes over the veggies and serve over brown rice.
